If you have read any of my previous blogs, you will know that I cook on the kamado grill several times a week. After all the time and work in preparing the meats for the grill, it is only fair that the meats be accompanied by tasty sides. Or, even better, health and tasty sides.
Before starting, one will need a few basic kitchen items:
- Cutting board
- Cookie sheet
- Olive oil
- Coconut sugar
Before we begin, a mixture of 50% cinnamon and 50% coconut sugar must be mixed into a small container. This will be used to season the fries.
Now to begin, it would be smart to preheat the oven to 425 degrees. That said, it is time to clean and prepare the potatoes.
Using a sharp Santoku or kitchen knife, carefully slice the potatoes in manner preferred. Personally, I prefer to cut them into fries. I have also found that the potatoes will cook better and be crunchier when thinly sliced.
Next, the cookie sheet is prepped by generously spreading olive oil on the sheet. Please note the tin foil is not necessary, it is only used to minimize cleanup afterwards. Once the oil is evenly spread, sprinkle the cinnamon and sugar mixture on the oiled sheet.
Now the sliced potatoes can be placed on the sheet. Once the fries are spread out, lightly dust the top with the cinnamon and sugar mixture.
Once the potatoes are prepared, seasoned, and placed on the oiled cookie sheet, it is time to bake this delicious side. I generally cook them for 20-25 minutes, or until the edges are crispy and brown.
